Erythorbic
Acid is a kind of stereo isomer, vitamin C and so on chemical properties
similar to vitamin C. Different ascorbic acid as a white to pale yellow or
crystal powder, odourless, has a sour taste, 166-172 ℃, melting point and decomposition,
with light gradually. Drying condition and is very stable in the air, and when
exposed to the atmosphere in aqueous solution is metamorphic rapidly, almost no
physiological activity of ascorbic acid, its oxidation resistance is better
than that of ascorbic acid, but poor heat resistance, strong reducibility,
heavy metal ions can promote the decomposition of ascorbic acid soluble in
water, room temperature solubility of 40 g / 100 ml, soluble in ethanol, 5 g /
100 ml, hardly soluble in glycerin, insoluble in benzene, 1% aqueous solution
of the PH value of 2.8.
Oxidation resistance
Erythorbic Acid, the antioxidant capacity

dry. But in aqueous solution, when there are air, metal, heat, light,
oxidation, soluble in water, room temperature solubility is 16 g / 100 ml,
hardly soluble in ethanol, 2% aqueous solution of the PH value of 6.5 to 8.0.
